Kimchi - Gimchi - Kimchee
I don’t have too much Info on Kimchi (wiki does), but I loved the homemade stuff - yummie

Surprisingly, I've never tried it! But I've always wanted to. I'm a bit of a light weight with spicy foods, and I've been told it can get hot.
